All the recipes in this page are
delicious, healthy and cruelty-free. Some of the traditional Latin
recipes have been transformed to avoid the use of animal products in
order to not contribute to animal exploitation, torture and suffering.
Animal products are not needed to turn out delicious food; in fact, they
may limit flavors, and of course, their presence is known to affect our
health.

Puerto Rican Red
Beans
Ingredients
2 cups Beans, canned or dry
(If dry, soften overnight by placing beans in a quart
of water, if canned, add the same can volume in
water).
2 teaspoons olive oil
2 teaspoonful salt
2 tablespoons stewed tomatoes
1 tablespoon fresh "sofrito"
1 potato and/or half plantain, each cut-up in chunks
Method
Heat all the ingredients through stirring
occasionally until
potatoes are soft, having absorbed some of the liquid and
the mix is thicker.
This can be accomplished in a microwave oven too;
-in this case, heat for 15 minutes medium, and allow to
sit for about 5-10 minutes covered. |

Ingredients
A
bunch of fresh "cilantro"
1 large onion
2 garlic cloves
1 tsp each:olive oil and red vinegar |
Method
Process the mix until all is ground and blended.
Store up to one week in refrigerator.
